Position: Executive Chef

 

Date Position Available: Mid March, 2010

 

Facilities: Welcome to the Lawton Country Club. Conveniently situated on the west side of

Lawton, Oklahoma. Lawton Country Club has the finest facilities in southwest

Oklahoma. Combine our newly completed 15,000 square foot Clubhouse, beautiful

course, friendly and professional staff, and outstanding cuisine to create the ultimate

experience for your friends, guests or business associates.

 

This member-owned club is 63 years old and has 325 member families that generate

$400,000 in F&B Revenues. The new Clubhouse has multiple private event rooms and

member dining. Other Amenities include: 18 Hole Par 71 Perry Maxwell and Trippe

Davis Golf Course; 2 Outdoor Hard Tennis Courts; 1 Outdoor Swimming Pool; New

Family Facility and Fitness Center

 

Brief Job Description: Responsible for all food production, including that used for Member Dining and private

event functions. Develop menus, set food purchase specifications and recipes.

Supervise production and kitchen staff. Work with line staff to deliver consistent and

timely food during meal periods. Develop and monitor food and labor budget for the

department. Maintain highest professional food quality and sanitation standards. The

Executive Chef will be the most highly skilled member of the culinary team and is

ultimately responsible for all activities in the culinary department. Our club chef must

be versatile, coupling culinary talent with a strong desire to please and interact with

the membership. In addition to being a talented craftsman able to create and produce

quality food products, the chef must be a capable business leader. He or she must know

how to control costs, meet deadlines, practice proper sanitation, relate well to the

club’s membership, and provide leadership for the culinary team.

 

Qualifications: Candidate should possess a minimum of 3 years of experiences as an Executive Chef,

preferably in a country club, premier hotel or high end restaurant environment with

over $1 million in F&B revenues. Candidate should have previous management

experience with large functions (200+ people). It is preferred that the Candidate has

experience with multiple Food & Beverage outlets. The candidate must possess well-

developed financial and administrative skills. The candidate should have previous

experience with implementing ongoing standardized training programs for kitchen

personnel.

 

Compensation: $55,000 - $65.000 (DOE), Facilities Use Privileges, Food Discounts
